Hot Pot and Toaster Oven Warm Bread Salad of Crispy Pancetta, Parmesan and Poached Egg

1 ciabatta loaf, torn into pieces Extra-virgin olive oil 1 clove garlic, peeled and sliced Sea salt and freshly ground black pepper 12 slices pancetta or bacon Juice of 1 lemon 4 large organic eggs 3 large handfuls arugula 1 head oak-leaf lettuce 3 1/2 oz. Parmesan cheese (not grated)

Set oven to 400 degrees; fill hot pot with water. Drizzle bread with oil, then toss it with garlic and seasoning. Bake for 10 minutes, add pancetta and bake 5 minutes more. Mix lemon juice with 8 tbsp. oil and seasoning. When pot simmers, poach eggs (about 4 minutes). Divide salad, bread and pancetta between four plates, and top each with an egg. Grate on the Parmesan.

Hot Plate and Toaster Oven Shrimp With Chili, Parsley, Ginger and Garlic

Extra-virgin olive oil 1 thumb-size hunk ginger, finely chopped 2 cloves garlic, peeled and sliced 2-3 fresh red chilies, seeded and finely sliced 16 large whole shrimp, peeled 1-2 lemons, to taste 1 handful parsley, roughly chopped Sea salt and freshly ground black pepper 4 slices ciabatta

Set hot plate on high. Into your sizzling frying pan, toss 4 tbsp. olive oil, ginger, garlic, chili and shrimp. Fry for about 3 minutes, then turn down heat and squeeze in the juice of 1 lemon. Add parsley and a couple of glugs of olive oil. Make sure to taste the sauce–it may need more lemon–then season to taste with salt and pepper. Serve over toasted ciabatta to mop up the tasty juices.

No cooking needed Marinated Mozzarella in Cr??me Fraiche With Lemon and Marjoram

4 balls mozzarella 1 small tub cr??me fraiche (or about 6 heaping tbsp.) Sea salt and freshly ground black pepper 1 lemon 1 handful fresh marjoram 2 fresh chilies, seeded and finely sliced Extra-virgin olive oil

Cut mozzarella into 1/2-inch-thick slices. Place on a large plate, then smear on the cr??me fraiche. Season to taste with salt and pepper. Finely chop half the lemon rind (putting the leftovers aside, in case the flavor needs tweaking). Sprinkle over the marjoram and chili bits. For a Jackson Pollock effect, drizzle artfully with 4 tablespoons oil.
